Halfway Through My First Whole30!

I’m halfway through the Whole30 (in fact, when this publishes I’ll be on Day 15) and nothing has exploded. My husband and I never experienced the symptoms that seem to plague other people but we may be out of the woods on that. I was eating terribly leading up to my Whole30 so I was expecting the worst but I’ve also been working from home the last few weeks. This schedule has allowed me to be very hands on in the kitchen and a very stress free first week and I’m so grateful for that.

I don’t cook. Like, basically, ever. Jordan has done ALL the cooking for the duration of our marriage and, as patient as he is, he was kind of at his wits’ end with me. I hate cooking because I’m not great at it. But, I’m not great at it because I don’t practice and, because Jordan cooks all the time, he’s gotten even better at it. Well, one of the conditions for Jordan joining me on this journey was that I would help him cook and I’ve held up my end of the bargain. While he does a lot of the heavy lifting, I’ve made a couple dishes myself and they’ve been GOOD. Below, I’ve shared 4 of my favorite meals (and the recipes) from the past two weeks.

I’ve committed to my water every day (currently Day 16 of that) and I did 2 workouts during the first week and 3 the second week. In terms of how I feel, I’ve been sleeping very well, I feel energetic when I wake up in the morning and I’m never really hungry; I’m feeling full a little longer than usual. I have a long day on campus tomorrow, a work dinner and work trip later this week so I’m a little apprehensive about the chance in my schedule. To handle that anxiety, I’ve packed breakfast, lunch and snacks for tomorrow, decided what I’m eating at the restaurant and planned meals for the trip. I would rather be over-prepared than get caught out there.

Overall, I’m enjoying the process and it’s bringing me and my husband closer. I feel so powerful because I’m getting better in the kitchen and am considering adopting a paleo lifestyle long-term.

    Oh man! Sounds like you’re doing very well so far. All of these dishes sound interesting and I’d love to try each and every one. My hang up is lack of time. This wedding date is getting closer so time is of the essence. I don’t really have the time Iike I need right now so I’ve promised myself that after the wedding, I’ll devote more time to a better diet to go along with my workouts. I know that’s backwards but we have a lot on our calendar this year…So I’ll need to be snatched year-round! I feel like the hardest parts are behind you! You’re halfway to the finish line! Keep up the great work.
